Charming White Chocolate Cupcake and a DJ

We have all suffered from that insane tension of impressing someone on their birthday. I can attest that simple is always best and with cautious research, you can spark staggering magic with the correct bag of tricks.

I have been rocking the socks off chocolate cake lovers for the past couple years and I had to overwhelmingly excite the crowd yet again. Of course I made some very fun chocolate cupcakes but I needed the extra wow factor for my music savant.  How awesome is it to craft a pair of DJ Headphones, a relic Vinyl Record and a Native Instrument Maschine Production System? 





What's next?

Delicate white chocolate cupcake frosted with an airy saffron buttercream swirl, topped with shaved toasted macadamia nuts, cracked Pink Himalayan salt crystals and saffron threads. Is that even a real thing???!!!This derivative of chocolate is very subtle in taste and bears no resemblance to that great tasting stuff that we all love and enjoy, yet, the hint of exotic salt and spice enhances the taste profile whilst maintaining a well balanced dessert adventure.

Cocoa solids are a mixture of flavonoids and alkaloids, such as theobromine, phenethylamine and caffeine that remain after cocoa butter is extracted from cacao beans.

What the hell is white chocolate? It definitely does not look like chocolate as it does not contain cocoa solids. A combination of cocoa butter, milk solids, sugar, milk fat and lecithin — a fatty emulsifier is used to to make white chocolate.

Barbadine Cheesecake on a Nutmeg Crust

Cheesecake was the first dessert I had ever desired to make and the idea of including local, exotic fruits was something that sprouted when I was much older. I can still remember the recipe for lemon cheesecake in a local newspaper when I was 11 years old. It seemed like the easiest cake to make with minimal ingredients. Sixteen years later, I finally made my first cheesecake, which of course was a delicious success. 

Now that my vocabulary in taste has diversified, the food adventures have taken flight.
I have embarked on a passionate expedition to learn how textures and flavours can be developed to further enhance the experience of luxuriating in the taste of a well-crafted dessert.

Velvety smooth barbadine cheesecake on a nutmeg spiced cookie crust, served with a dollop of whipped cream and a toasted pistachio and smoked sea salt caramel brittle. Can you say that in one breath? Lol



Savvy?
The Giant Granadilla or Barbadine plant produces the largest fruit in any species within the genus Passiflora. It is one of the exotic fruits native to Trinidad and has a lingering ambrosial aroma.

The fleshy pulp is blended together with sweetened milk and warm spices to create a delightful beverage and ice cream. The leaves are steeped as a tea and is believed to assist in the regulation of blood pressure and those who suffer from diabetes.
